Matcha is powdered tea made from unharvested tea leaves that have been shielded from sunlight for two to three weeks, steamed and dried without rubbing, and ground into a powder using a white mortar, leaving only the soft and tasty leaf pulp.

Sencha Nisen

For the first cup, pour in slightly cooled water, about 80 to 90 degrees. The second cup is poured into the cup at a higher temperature and shorter brewing time than the first cup. This will give the second cup a clean taste with a touch of astringency.
